Our black cod tips come in vacuum sealed pouches which weigh about 1lb each. Tips are tender, flavorful teardrop shaped cuts taken from the collar of the black cod—a prized part of the fish known among fishermen for its rich, buttery texture. Thanks to their naturally high fat content, these morsels stay incredibly moist and tender even when grilled or broiled over high heat. They pair beautifully with a simple teriyaki marinade and can be served as irresistible appetizers or a satisfying main dish over rice.
Halibut cheeks and Black Cod Tips (collar meat) is often discarded by Alaska processors because they are labor intensive to cut from the fish. We are over joyed that Seafood Producers Co-op has agreed to cut a limited amount for us to sell this spring. Not only are they delicious, but preserving these premium cuts helps ensure more of the fish is put to good use—supporting a more sustainable and responsible way to enjoy seafood.
